Y'all asked some questions about my being a vegetarian and here are some answers. The first set of answers can be found here.

What is the flax portion to replace an egg?
For awhile there, I wasn't eating eggs at all. After I stopped eating them, I pretty much didn't miss them one bit and swore off eggs forever. Then I went to the Yucatan and, man, do those people love them some eggs. So, I was temporarily back on eggs--huevos rancheros, papadzules, mexican omelettes
. Generally speaking, though, I don't buy eggs at all and don't much like them. When a recipe calls for eggs, I use flax.
To make an "egg" use: 1 tablespoon flax + 2 tablespoons water.
This flax-istead-of-eggs thing sometimes works, sometimes doesn't. For instance, I make almost-vegan scones (almost because I sometimes add chocolate chips) and the flax replaces the eggs with no problem at all. However, I tried to use flax instead of eggs in one of those Betty Crocker cake mixes and the resulting cupcakes were a disaster.

What do you eat in a typical day?
So here's what I ate yesterday:
Breakfast: Wheat toast with peanut butter
Snack: An apple
Lunch: An avocado, lettuce, cucumber sandwich and some strawberries
Snack: Mixed nuts
Dinner: Fettucini with olive oil, fresh basil, tomatoes
Sounds pretty healthy, I know, but I do plan on having ice cream for dinner tonight so it all just barely balances out.

What are your and Will's favorite meals?
About once a week we eat vegetarian tacos or taco salads which consist of black beans, lettuce, jalapeños, avocado, corn, tomatoes, and so on.
We also make pasta one or twice a week which usually includes some olive oil and some fresh basil and then whatever veggies are in the crisper, typically some squash or tomatoes.
We also love this cold sesame noodle recipe.
Enger-G egg replacer is pretty good for baking.

I'm impressed. I would normally say I don't eat that many veggies in a week, but I DID just eat an entire green pepper (because I cannot keep up with our farm share and I refuse to throw anything away). Can't wait to hear how the locovoring goes!

Love the locavore challenge! If you're ever in Sebastopol, you have to go to Screamin' Mimi's. It's the best!
