Whip It Up: Week Five
This week I am going to be whipping up a vegan pasta dish for y'all. My original plan was to whip up a fancy cocktail for you but, seriously, I have been extra-drunk all week so I can't even think about having another basil vodka gimlet at this point. Maybe next week.
So, I am making vegan pasta. Not just vegan pasta, but vegan pasta with whole wheat penne. Like, the ultra-healthy crap. What has gotten in to us?
All this stuff is going to be made into a sauce.
Simply dump all the ingredients into the Magic Bullet and bullet it until creamyish. You should definitely chop the sun-dried tomatoes a bit before trying to bullet them. I speak from experience.
Voila! Sauce! Add it to the drained pasta, put some artichokes on top, garnish with some basil.
This recipe is quite easy, quite good, and quite vegan. If you like that sort of thing. If not, come back next week for a cocktail.
Ziti with Sun-Dried Tomato Cream
Makes 4 servings
1 lb. ziti (or penne, whatever)
1 cup chopped oil-marinated sun-dried tomatoes
1 cup firm silken tofu, drained and crumbled
3 cloves garlic, chopped
4 tablespoons chopped fresh basil or 1 tablespoon dried basil
2 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 small can marinated artichokes, drained and chopped
Cook the ziti al denté. Meanwhile, in a food processor, combine the tomatoes, tofu, garlic, basil, vinegar, salt, pepper, and olive oil. Process to a smooth consistency. Drain the pasta and toss with the sauce and artichokes. Sprinkle with the parsley and soy parmesan, if desired.

I think if you want people to eat this, you should just do away with calling it "vegan." Even though meat eaters technically eat vegan foods all the time, some of them tend to shy away from something specifically CALLED "vegan." So silly! (And yes, that looks most delicious!)
