Mint to Be
I'm not sure if I have mentioned it before, but I love me some peppermint. Like, I am truly, madly, deeply in love with the peppermint. The peppermint and I are totally making out behind the bleachers.

I'm not a huge fan of peppermint on its own... if I'm buying mints for my purse, I go for wintergreen. BUT if you're talking about mixing a little chocolate with the mint, well, then, HELLO! Yum.
That parfait looks intriguing, though!

CHOCOLATE MINT MOUSSE
Ingredients:
2 T dried peppermint (or 1/4 c. fresh peppermint)
1/2 c. half-and-half
4 oz. semisweet chocolate
2 c.s heavy cream
1/4 c. sugar
1/2 t. vanilla extract
Fresh Mint sprigs and fresh strawberries for garnish
Directions:
In a small saucepan, combine peppermint and half-and-half. Cook over low heat for 2 minutes. Remove from heat. Cover and steep 15 minutes. Strain the peppermint infusion and discard the peppermint.
In a double boiler over hot water, melt the chocolate, stirring occasionally. Add the peppermint infusion to the chocolate and stir until smooth. Remove from the hot water bath and set aside to cool completely.
In a chilled bowl with an electric mixer on high speed, beat the heavy cream until it begins to hold its shape. Gradually add the sugar and vanilla, beating to stiff peaks.
Fold 1/2 cup of whipped cream into the cooled chocolate. Fold the chocolate mixture back into the remaining whipped cream until blended.
Spoon the mixture into individual parfait dishes and chill until set. Garnish with mint sprigs and fresh strawberry halves.
Serves 6-8

Sucks that peppermint is really a "seasonal" thing and it's only 2 months out of the year that manufactures make pepperminty things.
Anyway my recipe:
Peppermint Tea
1 Peppermint Tea Bag
Some hot water
honey or sugar to taste (I prefer honey)
Boil water and pour over tea bag in an 8 oz mug. Steep for 3-5 minutes. Stir and add honey to taste.

Sometimes I think the only reason I like winter is because of the seasonal peppermint icecream. Mint and chip just doesn't do it for me....

I LOVE me some peppermint too. Love it, Love it, Love it. One of my favorite easy peppermint desserts is to make Ghirardelli double chocolate brownies (from a box), and then slather them with homemade peppermint buttercream frosting. SO GOOD!

This is the easiest thing ever and yet will really impress people (you know, should you decide to share). You just buy yourself a brownie mix, preferably chocolate fudge or dark chocolate, make it according to the directions, but also tear up a bunch of York Peppermint Patties and stir them into the batter. Then bake as directed. In addition to the pepperminty goodness, they are also nicely gooey.

Have you tried the candy cane marshmallows from Trader Joe's...Oh. My. God.
And just to add to the brownie recipe above...if you fill a muffin tin half way with brownie mix, set a York in there and then cover with more brownie, you get a surprise in each cup...perfect for bake sales...works with Rollos or Kisses too but we are talked about mint, right?
